Introduction:

These Rosemary Potatoes may be the oldest side dish in the book but the combination of crispy oven baked potatoes and fresh herbs flavored with garlic and olive oil make them a true classic! Rosemary Potoes are easy to prepare in advance and just pop them in the oven an hour before your guests arrive! The flavor of the potatoes goes well with both meat dishes such as a good roast or fish. Eventhough you can trust to prepare a tasty dish when joining rosemary and potato since it's a golden combination, you can also experiment with other herbs to flavor this delicious side dish, depending on your main course, such as thyme for meat courses and sage for seafood dishes!
    For the Rosemary Potatoes:
  • Garlic

    1 kg

Preparation:


Wash and peal the potatoes. Then, cut the potatoes in slices with a thickness of about 1 cm.


Cut the potato slices in medium sized cubes and put them in a bowl. Rinse the cubes several times with cold water until clear and no longer turbid making the potatoes lose their starch and soften.


This will add that etra crunch to the potatoes once baked in the oven. Now, put a pot on the heat with enough water to boil the potatoes in. Add the cubes when the water starts to boil and cook for about 3-4 minutes.


In the meanwhile, cover an oven dish with baking paper and grease with some olive oil.


When the cooking time has passed, drain the potatoes to make sure they lose as much of the cooking liquid as possibile. Pour the cubes on the greased oven dish and evenly spread them out over the dish. Now, preheat the oven to 200°C and peal the 2 garlic cloves.


Cut the pealed garlic cloves in half and season the potato cubes with the garlic, the branches of rosemary, some salt and a drizzle of olive oil.


Place the dish in the preheated oven and bake for about 50-60 minutes. Serve the Rosemary Potatoes warm with a sprinkle of salt to complement a main dish based on meat, fish or vegetables!
Cooking Tips:

Make sure to rinse the potato cubes well for a crunchy oven bite.

Boil the potatoes for about 4 minutes before baking in the oven or they might result undercooked.

For a less caloric side dish only use the olive oil to grease the oven dish without drizzling the potatoes.

For some freshness you can add some squeezed lemon juice and for some spice you can add a pinch of pepper.
